Fluffy Vegan Pancakes

These vegan pancakes are fluffy, delicious, and perfect for any morning!
Ingredients
  • 1¼ cup soy milk + 1 Tbsp lemon juice
  • 2 Tbsp oil
  • 1 tsp vanilla
  • ¾ cup all-purpose flour
  • ½ cup whole wheat flour
  • 2 Tbsp wheat germ
  • 2 Tbsp sugar
  • ¼ tsp salt
  • 2 tsp baking powder
  • ½ cup favorite fruit, nuts, or chocolate chips (optional)
Instructions
  1. Preheat griddle to 350ยบ, or a non-stick frying pan over medium heat.
  2. Mix milk and lemon juice together. Add oil and vanilla to milk mixture, and set aside.
  3. Combine all dry ingredients together in a medium mixing bowl.
  4. Add the liquid ingredients to the dry ingredients, and stir until just combined (a few lumps are ok). Be careful not to over mix.
  5. Gently fold in any additional fruit, nuts, chocolate chips, etc to the batter at this time.
  6. Pour ⅓ cup of batter onto prepared griddle or pan. Cook until small bubbles begin to appear in the batter, and the edges of the pancakes seem dry.
  7. Flip carefully, and cook the other side an additional minute or two. The pancakes should be fluffy and lightly golden brown on each side.
  8. Serve hot with your favorite pancake toppings!! :)
