- 2 cans black beans, drained (or cook your own!)
- 4 cups Quick and Easy Roasted Veggies*
- -Optional Toppings:
- Salad or slaw
- Lime or lemon wedges
- Cilantro
- Guacamole
- Salsa
- Ranch*, or your favorite savory salad dressing
- Divide quinoa, beans, and roasted veggies between bowls.
- Add any additional toppings if desired.
