Blueberry Scones

These scones are perfect for berry season, and are SO easy and delicious. They are a delicious addition to breakfast, or any meal for that matter. I'll be amazed if you can eat just one.
Ingredients
  • 1 Flax egg*
  • 1 Tbsp lemon juice
  • ½ cup soy milk
  • ½ tsp vanilla
  • 2 cup flour
  • 3 Tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ⅓ cup cold Earth Balance
  • 1 cup fresh blueberries
  • ½ cup powdered sugar (for glaze)
  • 1 T soy milk (for glaze)
Instructions
  1. Preheat oven to 375º.
  2. Mix dry ingredients together in a medium bowl.
  3. Mix lemon juice and soy milk together. Set aside.
  4. Prepare flax egg, and set aside to thicken.
  5. Using a pastry cutter or a fork, cut cold vegan butter into flour mixture until it resembles wet, course sand.
  6. Combine wet and dry ingredients and mix until well combined. Mixture will resemble a thick dough.
  7. Gently fold in blueberries.
  8. Form dough into a ¼-1/2 inch thick circle on a greased cookie sheet
  9. Using a sharp knife or pizza cutter, cut dough into triangles.
  10. Bake at 375º for 20 minutes, or until golden brown. Do NOT over bake.
  11. Remove from oven, and drizzle with glaze.
  12. Enjoy!
