Peach Cobbler Pancakes

These peach cobbler pancakes are tender, sweet, fluffy, and studded with juicy peaches in almost every bite. Make them for a breakfast, brunch, or even for supper!
Ingredients
  • 1¼ cup soy milk + 1 Tbsp lemon juice
  • 2 cups all-purpose flour
  • 1 Tbsp aluminum free baking powder (I like to use Rumsford)
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 3 Tbsp brown sugar
  • 1 Tbsp vegetable oil
  • 1 tsp vanilla extract
  • 2 peaches, finely chopped (about 1½ cups)
Instructions
  1. Heat a skillet over medium heat, or a griddle to about 125ยบ.
  2. Combine soy milk and lemon juice. Set aside.
  3. Mix dry ingredients together in a medium mixing bowl.
  4. Add all wet ingredients and peaches to the dry ingredients, stirring well just until batter becomes thin enough to pour. Be careful not to over mix the batter.
  5. Using a ⅓ cup, pour batter onto prepared pan or griddle.
  6. Cook until the air bubbles in the middle of the pancakes remain open after popping, and the bottoms are golden brown.
  7. Flip pancakes over, and cook until golden-brown on the other side.
  8. Serve hot with your favorite pancakes toppings.
