Curried Red Lentils

These warm and creamy Curried Red Lentils are the perfect meal for a cold winter's night.
Ingredients
  • 3 Tbsp vegan butter (I like to use Earth Balance)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 2 tsp Garam Masala
  • 2 tsp cumin
  • 1 tsp sea salt
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can tomato sauce
  • 2 cups red lentils
  • 1 Tbsp lemon juice
  • 4.5 cups water
  • 1 (14 oz) can full-fat coconut milk (reserve for end)
Instructions
  1. Melt vegan butter in a medium-size sauce pan over medium-high heat. Add chopped onion and minced garlic. Sauté until translucent and fragrant, being careful not to brown garlic.
  2. Add spices, and stir until well combined.
  3. Add all remaining ingredients (except coconut milk) to sauce pan and stir to combine.
  4. Bring to a boil, then reduce to a simmer. Cover and cook until lentils are tender, stirring occasionally.
  5. Remove from heat, and stir in coconut milk. If desired, whiz with an immersion blender or in a regular blender for a smoother texture.
  6. Serve hot with bread, or over rice.
