Orange Cranberry Scones

Sweet, citrusy, and just a little tart, these festive scones are perfect for any holiday meal!
Ingredients
  • 1 Flax egg*
  • 1 Tbsp lemon juice
  • ½ cup soy milk
  • ½ tsp vanilla
  • 2 cup flour
  • 3 Tbsp granulated sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 Tbsp orange zest
  • ⅓ cup cold Earth Balance
  • 1 cup fresh cranberries, slightly chopped
  • 1 cup powdered sugar (for glaze)
  • 2 T soy milk (for glaze)
Instructions
  1. Preheat oven to 375º.
  2. Mix dry ingredients and orange zest together in a medium bowl.
  3. Mix lemon juice and soy milk together. Set aside.
  4. Prepare flax egg, and set aside to thicken.
  5. Using a pastry cutter or a fork, cut cold vegan butter into flour mixture until it resembles wet, course sand.
  6. Combine wet and dry ingredients and mix until well combined. Mixture will resemble a very thick dough.
  7. Gently fold in cranberries.
  8. Turn dough out onto a floured surface and gently knead until moist and sticky.
  9. Form dough into a ¼-1/2 inch thick circle.
  10. Using a sharp knife or pizza cutter, cut dough into triangles.
  11. Place each triangle onto a greased cookie sheet or pizza stone.
  12. Bake at 375º for 20 minutes, or until golden brown. Do NOT over bake or your scones will be dry.
  13. Remove from oven, and drizzle generously with glaze.
