Garden Fresh Salsa

Our tomato plants have been producing really well this year, which means that we’ve been eating tomatoes in and on almost everything. Add that to my family’s long-time love of salsa, and you can come up with some pretty yummy combinations… Such as this Garden Fresh Salsa!

I love canning salsa, but sometimes you want something fresh and chunky that you can eat right away! This salsa uses fresh ingredients, and comes together in less than 30 minutes. The hardest part is chopping the veggies. 😉

We like our salsa to have some spice, but if you don’t you can always use half a jalapeño pepper. I wouldn’t recommend taking all of the jalapeños out though, since they can add a nice flavor without spice.

The cilantro adds a fresh and authentic flavor that makes this salsa, in my opinion. In fact, I usually add a little extra. 😉 I love using lime juice, but you could also use lemon juice if you don’t have any on hand.

This salsa is fresh, juicy, slightly spicy, crunchy, and full of flavor. You can enjoy it on chips, burritos, enchiladas, tacos, burgers… And just about anything else your heart desires!

Serves: 4
Ingredients
  • 4 cups diced tomatoes
  • 1 small red onion, finely chopped
  • 2 cloves fresh garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 cup chopped cilantro
  • Juice of 1 lime
  • 1 tsp salt
  • ½ tsp cumin
Instructions
  1. Mix all ingredients together in a medium sized bowl.
  2. Cover and chill until ready to serve.
  3. Serve fresh with chips, or as a topping for your favorite hispanic foods!
