These easy vegan overnight oats are one of our favorite go-to options for busy mornings. There are SO many different variations to these, but today I am going to share a SUPER easy option with only 7 ingredients that can be whipped up in a flash the night before, and customized to your heart’s desire. 😉 Plus, they are full of fiber and protein, and the oats provide a kick of energy to hold you through the morning. Happy February, everyone!! It’s hard to believe that January has already come and gone… I have a feeling that 2018 is going to go by even quicker than 2017 did. Yikes.
The ingredients required are basic, and can also be switched up as desired. You could use a yellow or orange pepper instead of a red one, add some tomato, a handful of sunflower or hemp seeds, or just about any other favorite veggie or topping.
