One Pot Yellow Curry

Our leaves are starting to change up north, and with our lows are dipping down into the 30s, I’ve been reaching for warmer, cozier meals the last few days. This One Pot Yellow Curry is a family favorite! Not only is it filling and delicious, it is quick and easy to customize.

My favorite cuisine has been Thai for almost as far back as I can remember. And as much as I love noodles, a warm, creamy, filling curry has always been my dish of choice. Hey everyone!! Summer was a little late in coming up north where we live, but the heatwave this weekend left no doubt in our mind that it has arrived. Add high humidity to the high temps, and it’s a wonder we didn’t all melt. Oh, and did I mention we don’t have air conditioning? Thankfully it’s dropped back to “normal” temps again, and hopefully for the rest of the States, too!

Roasted Veggie and Black Bean Quinoa Bowls

We got hit hard by the polar vortex this week (hello, -20º F), which left us huddled inside by the fire. It also left me craving some of my favorite comfort foods… And this Roasted Veggie and Black Bean Quinoa Bowl lands solidly on that list!

Packed with protein, fiber, and hearty veggies, this is a super satisfying meal option for this winter (or spring, or summer… or anytime!). Plus, it is SO easy to make. All the ingredients can be prepped ahead of time and reheated for a quick and healthy meal later in the week. (I have included prep time for the roasted veggies and quinoa in the recipe, but if you make your ingredients ahead of time, you can have a full meal ready to eat in about 5 minutes.)…

Baked Vegan Mac and CheeseBaked Vegan Mac and Cheese… Warm, crispy, creamy mac and cheese. Comfort food, anyone?

Mac and Cheese seems to be a staple in the diet of most average kids (at least in America). I remember standing on a kitchen chair so I could stir the butter, milk, and cheese packet into my Kraft mac and cheese as a kid. I also remember my Aunt’s incredibly yummy homemade mac and cheese (still working on recreating that one…). And I remember some not-so-good attempts at making a vegan version (which usually ended up clumpy and tasting a lot like the pimentos that made it orange).

However, I’ve also had some incredible vegan mac and cheese. And let’s just say, I really hope that this recipe makes it on your list of favorites!
