Hey everyone!! Summer was a little late in coming up north where we live, but the heatwave this weekend left no doubt in our mind that it has arrived. Add high humidity to the high temps, and it’s a wonder we didn’t all melt. Oh, and did I mention we don’t have air conditioning? Thankfully it’s dropped back to “normal” temps again, and hopefully for the rest of the States, too!

Baked Vegan Mac and CheeseBaked Vegan Mac and Cheese… Warm, crispy, creamy mac and cheese. Comfort food, anyone?

Mac and Cheese seems to be a staple in the diet of most average kids (at least in America). I remember standing on a kitchen chair so I could stir the butter, milk, and cheese packet into my Kraft mac and cheese as a kid. I also remember my Aunt’s incredibly yummy homemade mac and cheese (still working on recreating that one…). And I remember some not-so-good attempts at making a vegan version (which usually ended up clumpy and tasting a lot like the pimentos that made it orange).

However, I’ve also had some incredible vegan mac and cheese. And let’s just say, I really hope that this recipe makes it on your list of favorites!

Vegan Banana Cream Pie

Vegan Banana Cream PieHappy Friday, friends! March 2nd was supposedly National Banana Cream Pie Day (who knew there was such a thing?). I’m joining in on the festivities (better late than never!) with a vegan twist on this classic dessert!

This vegan banana cream pie is started off with a crunchy graham cracker crust (the best beginning to any chilled pie, in my opinion). The filling is made from a super-easy vanilla pudding, and fluffy coconut whipped topping. Add more coconut whipped topping and some fresh bananas on top, and *Woah*… I bet you’ll be coming back for another slice. 😉 Or, you could be like my husband, and eat 3 slices for breakfast. Win-win….

Unbelievable Vegan Cheese Sauce

Something I’ve missed since becoming vegan is cheese. So when a teacher in high school made a cheese sauce that almost perfectly resembled nacho cheese, I was floored. Garden Fresh Kale Salad

Happy February, everyone!! It’s hard to believe that January has already come and gone… I have a feeling that 2018 is going to go by even quicker than 2017 did. Yikes.
But in happier news, I have a yummy recipe to keep you fueled during these cold winter days. This Garden Fresh Kale Salad is chock full of nutrients, and takes mere minutes to make. Let’s dive in!

The ingredients required are basic, and can also be switched up as desired. You could use a yellow or orange pepper instead of a red one, add some tomato, a handful of sunflower or hemp seeds, or just about any other favorite veggie or topping.
