I’ve sorely neglected the lifestyle and family section of this blog… I just genuinely get really excited about food. 😉 But we’ve had some good news baking for a while, and I figured now was the perfect time to share!
I am so blessed with a wonderful husband and a beautiful and vivacious [almost] 2 year old. And now, we’re adding a new little sunbeam to our family!…
Something I’ve missed since becoming vegan is cheese. So when a teacher in high school made a cheese sauce that almost perfectly resembled nacho cheese, I was floored. And kept going back for more. 😉 I’ve been working on tweaking and perfecting a recipe since then, and am very happy to share this truly unbelievable vegan cheese sauce with you!

These easy vegan overnight oats are one of our favorite go-to options for busy mornings. There are SO many different variations to these, but today I am going to share a SUPER easy option with only 7 ingredients that can be whipped up in a flash the night before, and customized to your heart’s desire. 😉 Plus, they are full of fiber and protein, and the oats provide a kick of energy to hold you through the morning. Oh – and you’ll have less dishes to wash after breakfast. Win-win! …
I love a good ranch dressing… On salad, pizza, burgers, mac and cheese… You get the picture. Since becoming vegan, however, I’ve been hard-pressed to find a vegan ranch that I really like! So, I set out to fix the problem once and for all… Allow me to introduce the BEST homemade vegan ranch!
With Valentine’s Day coming up in just two days, the stores are full of hearts, candy, and flowers for that “special someone.” Meanwhile, those of us who think a lot about food have had sweet treats on our mind… But sometimes we focus so much on dessert for Valentine’s Day, that we forget about the other meals! You guys… I am SO EXCITED about this Double Dark Chocolate Granola! It is seriously SO perfect. Crispy-tender, chocolatey, not too sweet… And it almost melts in your mouth. Plus, chocolate for breakfast??? Who WOULDN’T be excited about that? …
Happy February, everyone!! It’s hard to believe that January has already come and gone… I have a feeling that 2018 is going to go by even quicker than 2017 did. Yikes.
The ingredients required are basic, and can also be switched up as desired. You could use a yellow or orange pepper instead of a red one, add some tomato, a handful of sunflower or hemp seeds, or just about any other favorite veggie or topping. The key to this salad is to keep it simple, nutritious, and delicious. (Now if only everything else in life were that easy…) …
