Roasted Veggie and Black Bean Quinoa Bowls

We got hit hard by the polar vortex this week (hello, -20º F), which left us huddled inside by the fire. It also left me craving some of my favorite comfort foods… And this Roasted Veggie and Black Bean Quinoa Bowl lands solidly on that list!

Packed with protein, fiber, and hearty veggies, this is a super satisfying meal option for this winter (or spring, or summer… or anytime!). Plus, it is SO easy to make. All the ingredients can be prepped ahead of time and reheated for a quick and healthy meal later in the week. (I have included prep time for the roasted veggies and quinoa in the recipe, but if you make your ingredients ahead of time, you can have a full meal ready to eat in about 5 minutes.)

Start with a base of fluffy quinoa, add your favorite black beans (I like to make my own, but you could also use canned beans for ease), my favorite roasted veggies, and any additions you want!  I personally like to add some crunchy salad to the bowl, and drizzle a savory dressing over the top of everything. You could also add cilantro, salsa, and your favorite guac!

These Roasted Veggie and Black Bean Quinoa Bowls are savory, satisfying, and packed with protein.

Ingredients
  • -Bowl:
  • 4 cups quinoa (cooked)
  • 2 cans black beans, drained (or cook your own!)
  • 4 cups Quick and Easy Roasted Veggies*
  • -Optional Toppings:
  • Salad or slaw
  • Lime or lemon wedges
  • Cilantro
  • Guacamole
  • Salsa
  • Ranch*, or your favorite savory salad dressing
Instructions
  1. Divide quinoa, beans, and roasted veggies between bowls.
  2. Add any additional toppings if desired.
  3. Enjoy! 🙂

    Yum! I love roasted veggies! Maybe I could even get my husband to eat the quinoa…..probably not, but a girl can hope, right?

      Me too!! 😀 Haha – my husband wasn’t a fan of quinoa at all for a long time. But I finally won him over! Don’t give up – it is possible 😉

    Looks delicious! I was just thinking earlier today that I need to try my kids on quinoa again soon! E used to love it, but quit eating it a few months ago. Maybe he’s forgotten whether or not he likes it! I think I could get my family all on board with the “bowl” idea!
