I’ve been holding onto this recipe for over a year, waiting for the perfect time to share it. And now, not only is it perfect for Valentine’s Day, but Seasoned with Sunshine turns three this month!! (yay!)
I’ve loved working in this little corner of cyberspace, slowly (but surely) adding yumminess and sunshine post by post over the last three years. What started as a love for cooking and a super supportive friend who urged me to “just go for it” has turned into a hobby and a dream that I hope keeps growing. Happy New Year, everyone! It’s been entirely too long since I’ve posted! It has been an absolutely crazy last few months. 2018 was a blessed year, and probably one of the busiest we’ve had. We added another little one to our family, moved, bought our first house, celebrated four years of marriage, and have thrown ourselves headlong into home renovations and our new ministry assignment.
I’m sure each of you had some major milestones this past year as well, along with many wonderful memories made with those you love. What was your favorite thing about 2018? Let me know in the comments below!

Mac and Cheese seems to be a staple in the diet of most average kids (at least in America). I remember standing on a kitchen chair so I could stir the butter, milk, and cheese packet into my Kraft mac and cheese as a kid. I also remember my Aunt’s incredibly yummy homemade mac and cheese (still working on recreating that one…). And I remember some not-so-good attempts at making a vegan version (which usually ended up clumpy and tasting a lot like the pimentos that made it orange).
However, I’ve also had some incredible vegan mac and cheese. And let’s just say, I really hope that this recipe makes it on your list of favorites!
