When I was growing up, my dad always asked my mom to make asparagus (or, AS-pa-RA-gus, as he called it). Mom used to saute it in butter until it was tender and the ends were crispy. It practically melted in your mouth – SO good. But not exactly the healthiest. 😉 Thankfully, we can make them a little healthier without compromising the flavor by roasting them in the oven!…







I try to pack as many nutrient-dense foods as possible into my diet during the winter (especially now that I’m pregnant!), when fresh foods and sunshine aren’t as plentiful. One way I LOVE doing this is with green smoothies! And it doesn’t get much easier than this four-ingredient green smoothie.

Something I’ve missed since becoming vegan is cheese. So when a teacher in high school made a cheese sauce that almost perfectly resembled nacho cheese, I was floored.
