Hey everyone!! Summer was a little late in coming up north where we live, but the heatwave this weekend left no doubt in our mind that it has arrived. Add high humidity to the high temps, and it’s a wonder we didn’t all melt. Oh, and did I mention we don’t have air conditioning? When I was growing up, my dad always asked my mom to make asparagus (or, AS-pa-RA-gus, as he called it). Mom used to saute it in butter until it was tender and the ends were crispy. Valentines Day is almost here, and I have the perfect dessert for your special meal. Enter this incredible Vegan Strawberry Vanilla Cake with Strawberry Buttercream. Yum. 😀

I’ve been holding onto this recipe for over a year, waiting for the perfect time to share it. And now, not only is it perfect for Valentine’s Day, but Seasoned with Sunshine turns three this month!! (yay!)

We got hit hard by the polar vortex this week (hello, -20º F), which left us huddled inside by the fire. It also left me craving some of my favorite comfort foods… And this Roasted Veggie and Black Bean Quinoa Bowl lands solidly on that list!

Packed with protein, fiber, and hearty veggies, this is a super satisfying meal option for this winter (or spring, or summer… or anytime!). Plus, it is SO easy to make. All the ingredients can be prepped ahead of time and reheated for a quick and healthy meal later in the week. Happy Thursday, everyone! It’s been exceptionally cold in our part of the country the last several days (cold equals -20ºF with windchill…!), so I’ve been making a lot of comfort foods. Just because it’s cold outside, doesn’t mean we can’t be extra warm and cozy inside, right? 🙂

Happy New Year, everyone! It’s been entirely too long since I’ve posted! It has been an absolutely crazy last few months. 2018 was a blessed year, and probably one of the busiest we’ve had. We added another little one to our family, moved, bought our first house, celebrated four years of marriage, and have thrown ourselves headlong into home renovations and our new ministry assignment.

Baked Vegan Mac and CheeseBaked Vegan Mac and Cheese… Warm, crispy, creamy mac and cheese. Comfort food, anyone?

Mac and Cheese seems to be a staple in the diet of most average kids (at least in America). I remember standing on a kitchen chair so I could stir the butter, milk, and cheese packet into my Kraft mac and cheese as a kid. I also remember my Aunt’s incredibly yummy homemade mac and cheese (still working on recreating that one…). And I remember some not-so-good attempts at making a vegan version (which usually ended up clumpy and tasting a lot like the pimentos that made it orange).

However, I’ve also had some incredible vegan mac and cheese. And let’s just say, I really hope that this recipe makes it on your list of favorites!

Vegan Banana Cream Pie

Vegan Banana Cream PieHappy Friday, friends! March 2nd was supposedly National Banana Cream Pie Day (who knew there was such a thing?). I’m joining in on the festivities (better late than never!) with a vegan twist on this classic dessert!

This vegan banana cream pie is started off with a crunchy graham cracker crust (the best beginning to any chilled pie, in my opinion). The filling is made from a super-easy vanilla pudding, and fluffy coconut whipped topping. Add more coconut whipped topping and some fresh bananas on top, and *Woah*… I bet you’ll be coming back for another slice. 😉 Or, you could be like my husband, and eat 3 slices for breakfast. Win-win….
