Fluffy Vegan Pancakes

January 17, 2019 by Ariel 4 Comments

Happy New Year, everyone! It’s been entirely too long since I’ve posted! It has been an absolutely crazy last few months. 2018 was a blessed year, and probably one of the busiest we’ve had. We added another little one to our family, moved, bought our first house, celebrated four years of marriage, and have thrown ourselves headlong into home renovations and our new ministry assignment.

I’m sure each of you had some major milestones this past year as well, along with many wonderful memories made with those you love. What was your favorite thing about 2018? Let me know in the comments below!

But, I digress. This was supposed to be a post about pancakes… 😉 So, here we go!

Fluffy Vegan Pancakes

Who here likes pancakes? Fluffy Vegan Pancakes? You? Perfect! You’re in the right place. :D…

Cheesy Dill Popcorn Seasoning

March 27, 2018 by Ariel 2 Comments

Popcorn is a staple in our home… It’s hard to find an easier, faster, yummier snack! And this Cheesy Dill Popcorn Seasoning really takes it to a new level.

I grew up eating home-made popcorn several times a week, and now I make sure to always have a bag of kernels in my freezer. We especially like to pair a big bowl of popcorn with fresh fruit smoothies and yummy bread or scones for a light and easy supper option. Plus, it’s a great way to feed friends when they come over to visit!…

Four-Ingredient Green Smoothie

March 18, 2018 by Ariel Leave a Comment

Four-Ingredient Green SmoothieI try to pack as many nutrient-dense foods as possible into my diet during the winter (especially now that I’m pregnant!), when fresh foods and sunshine aren’t as plentiful. One way I LOVE doing this is with green smoothies! And it doesn’t get much easier than this four-ingredient green smoothie.

Baked Vegan Mac and Cheese

March 13, 2018 by Ariel 4 Comments

Baked Vegan Mac and CheeseBaked Vegan Mac and Cheese… Warm, crispy, creamy mac and cheese. Comfort food, anyone?

Mac and Cheese seems to be a staple in the diet of most average kids (at least in America). I remember standing on a kitchen chair so I could stir the butter, milk, and cheese packet into my Kraft mac and cheese as a kid. I also remember my Aunt’s incredibly yummy homemade mac and cheese (still working on recreating that one…). And I remember some not-so-good attempts at making a vegan version (which usually ended up clumpy and tasting a lot like the pimentos that made it orange).

However, I’ve also had some incredible vegan mac and cheese. And let’s just say, I really hope that this recipe makes it on your list of favorites!

Vegan Banana Cream Pie

March 9, 2018 by Ariel Leave a Comment

Vegan Banana Cream PieHappy Friday, friends! March 2nd was supposedly National Banana Cream Pie Day (who knew there was such a thing?). I’m joining in on the festivities (better late than never!) with a vegan twist on this classic dessert!

This vegan banana cream pie is started off with a crunchy graham cracker crust (the best beginning to any chilled pie, in my opinion). The filling is made from a super-easy vanilla pudding, and fluffy coconut whipped topping. Add more coconut whipped topping and some fresh bananas on top, and *Woah*… I bet you’ll be coming back for another slice. 😉 Or, you could be like my husband, and eat 3 slices for breakfast. Win-win….

Unbelievable Vegan Cheese Sauce

February 26, 2018 by Ariel 4 Comments

Something I’ve missed since becoming vegan is cheese. So when a teacher in high school made a cheese sauce that almost perfectly resembled nacho cheese, I was floored. And kept going back for more. 😉 I’ve been working on tweaking and perfecting a recipe since then, and am very happy to share this truly unbelievable vegan cheese sauce with you!

It’s creamy, smooth, melty, and savory. And the best part is that it’s FULL of veggies – which means that you don’t have to feel one bit guilty when eating [lots of] it….

The Best Homemade Vegan Ranch

February 18, 2018 by Ariel 7 Comments

I love a good ranch dressing… On salad, pizza, burgers, mac and cheese… You get the picture. Since becoming vegan, however, I’ve been hard-pressed to find a vegan ranch that I really like! So, I set out to fix the problem once and for all… Allow me to introduce the BEST homemade vegan ranch!

This ranch works great as a dip or a dressing. Thick, creamy, tangy, herby… It hits the spot. Not only is it yummy, it’s SUPER easy to make and includes 9 simple ingredients that you probably already have in your cupboard or fridge. Plus, it is SO much cheaper to make your own than to buy a pre-made vegan dressing….

Garden Fresh Kale Salad

February 9, 2018 by Ariel 2 Comments

Happy February, everyone!! It’s hard to believe that January has already come and gone… I have a feeling that 2018 is going to go by even quicker than 2017 did. Yikes.
But in happier news, I have a yummy recipe to keep you fueled during these cold winter days. This Garden Fresh Kale Salad is chock full of nutrients, and takes mere minutes to make. Let’s dive in!

The ingredients required are basic, and can also be switched up as desired. You could use a yellow or orange pepper instead of a red one, add some tomato, a handful of sunflower or hemp seeds, or just about any other favorite veggie or topping. The key to this salad is to keep it simple, nutritious, and delicious. (Now if only everything else in life were that easy…) …

Best Vegan Cornbread

January 14, 2018 by Ariel Leave a Comment

Happy January, everyone! I hope you all had a wonderful holiday season with your family! I know, I’m a little late… After traveling all over the country for 3 weeks, I’m finally getting back into the swing of things. But I have a yummy recipe to start your year off that is more than worth the wait.

One word: Cornbread. But not just any cornbread! This is definitely the BEST cornbread I have ever had – vegan or otherwise.

If you’re used to cornbread that is dry and crumbly, I’d like to introduce you to a whole new world of yumminess. This vegan cornbread is unbelievably moist, fluffy, and tender. And I promise you will never miss the dairy. It really is the BEST vegan cornbread….
