Happy New Year, everyone! It’s been entirely too long since I’ve posted! It has been an absolutely crazy last few months. 2018 was a blessed year, and probably one of the busiest we’ve had. We added another little one to our family, moved, bought our first house, celebrated four years of marriage, and have thrown ourselves headlong into home renovations and our new ministry assignment.
I’m sure each of you had some major milestones this past year as well, along with many wonderful memories made with those you love. What was your favorite thing about 2018? Let me know in the comments below!

I try to pack as many nutrient-dense foods as possible into my diet during the winter (especially now that I’m pregnant!), when fresh foods and sunshine aren’t as plentiful. One way I LOVE doing this is with green smoothies! And it doesn’t get much easier than this four-ingredient green smoothie.

However, I’ve also had some incredible vegan mac and cheese. And let’s just say, I really hope that this recipe makes it on your list of favorites!
Happy Friday, friends! March 2nd was supposedly National Banana Cream Pie Day (who knew there was such a thing?). I’m joining in on the festivities (better late than never!) with a vegan twist on this classic dessert!
Something I’ve missed since becoming vegan is cheese. So when a teacher in high school made a cheese sauce that almost perfectly resembled nacho cheese, I was floored. And kept going back for more. 😉 I’ve been working on tweaking and perfecting a recipe since then, and am very happy to share this truly unbelievable vegan cheese sauce with you!
I love a good ranch dressing… On salad, pizza, burgers, mac and cheese… You get the picture. Since becoming vegan, however, I’ve been hard-pressed to find a vegan ranch that I really like! So, I set out to fix the problem once and for all… Allow me to introduce the BEST homemade vegan ranch!
Happy February, everyone!! It’s hard to believe that January has already come and gone… I have a feeling that 2018 is going to go by even quicker than 2017 did. Yikes.
The ingredients required are basic, and can also be switched up as desired. You could use a yellow or orange pepper instead of a red one, add some tomato, a handful of sunflower or hemp seeds, or just about any other favorite veggie or topping. The key to this salad is to keep it simple, nutritious, and delicious. (Now if only everything else in life were that easy…) …
